Ingredients Ingredients for 6 servings 2 tablespoons olive oil 1/2 medium white onion, chopped 2 celery stalks, chopped 2 medium carrots, chopped 3 garlic cloves, minced 2 cans (28oz) (fire roasted) diced tomatoes 1 can (15oz) white beans, drained 1 cup uncooked farro 4 cups water 1 bay leaf (optional)
Steps Set a heavy bottom pot on medium high heat. Once hot, add olive oil, onion, celery and carrots. Cook for 3 -5 minutes until the onions turn somewhat brown. Add the garlic and cook for another minute. Then add in the remaining ingredients. Bring to a boil, then reduce the heat and cover and simmer for at least 20 minutes. Season to taste with sea salt & pepper. Garnish and enjoy!
